This whipped cream is light and fluffy and I could literally eat an entire bowl of this stuff. No regrets. Especially because there is literally nothing to regret about it. It has no sugar, instead it is sweetened with liquid stevia. Secret ingredient to make it so whipped-cream like? It's coconut! But it doesn't taste like coconut! How? I have no clue, but my brother confirmed this as he detests coconut.
1 can full fat coconut milk, placed in the fridge for several hours
Optional: fresh cut strawberries
Remove the can of coconut milk from the fridge and scoop out the thick hard cream that floated up to the top and spoon it into a glass mixing bowl. Reserve the liquid for later use, like a smoothie or something.
Add a dash of vanilla extract and stevia to taste. Depending on the brand you may need more or less than what I used, which was 4 drops.
Beat using a handheld or table mixer until fluffy. Spoon over fresh cut strawberries if desired, serve.
