I'm sitting here at the kitchen island looking out at the huge picture window in the kitchen watching a Cat 3 hurricane go by. It's stunning. Nature is absurd. Because I still have power, and nothing that needs to be done (except hurricane party of course- my Floridian readers, you know what I'm talking about), I decided to blog- while the power is still on. So with that I leave you with this delight- Tiramisu Swirl Banana Ice Cream Sheet Cake! I love Tiramisu. It's in my blood. I can't help it. This is a different take: healthier and lighter that mimics the flavors of Tiramisu so delicately.
These pancakes are perfect. My favorite pancake recipe thus far, and for many reasons. The first reason being that these pancakes are made without flour, and instead steel cut oats. They're incredibly fluffy, far fluffier than any other pancakes I've ever had. And they're made so quickly!! With so little ingredients! Dare I say these bad boys aren't bad for you either? It's true, take a lot at the ingredients list!
Since I'm off of wheat for two weeks (I'm doing a two week self challenge of no wheat, no added/refined sugars) I feel like my breakfast options have become a little slimmer. Occasionally I would eat a bagel or toasted slice of sprouted bread. With that said, I did not miss the bagel or the bread after eating this delicious warm chia seed banana porridge. It's prepped at night and takes just a minute to prepare in the morning. Sounds great, doesn't it?
Y'all. Oh My God. I am obsessing over Banana Nice (Ice) Cream! I want to make it every night for the rest of my life and just share it with everyone I meet from now until forever! La la la, call me dramatic- THIS IS THE BEST. And the possibilities are endless for flavor combos. Got some frozen bananas? What about 5 minutes to spare? Then you can have banana ice cream! AND YOU! And YOU over there!! And YOU too!! EVERYONE GETS BANANA NICE CREAM. Ok, I'm not Oprah, so I'll tone it down a bit. But for real, go make this.
Hellooooo summer! Well, maybe not for you guys up in the North East but here in South Florida we have officially skipped spring! It's hot, getting humid, but still beautiful. When I think of summer there is one word that instantly comes to mind: blueberries. Every summer my parents would drop me off at camp in northern Maine and I would spend the afternoons swimming in the icy lake and picking wild blueberries with my camp friends. It was heaven. So whenever berries come into season I get beyond excited, as they always bring me back to my childhood. These pancakes are made with buckwheat, which is really not a wheat at all- it's a ground up seed, and turmeric which has incredible anti-inflammatory properties. The pancakes are drizzled with a warm blueberry maple syrup that truly ties the whole thing together.
A tribute post to our college peanut butter banana smoothie addition: My best friend/former Tallahassee roommate, Indigo, and I used to drink these on the regular. Seriously, probably about three times a week. Except I've jazzed it up a bit with some cacao nibs this time around. Oh, nostalgia is hitting me like a wave... Nothing quite like those college days, huh Indie? Le sigh.
Pina Colada Protein Smoothie anyone? Yes please.
If I'm in a time crunch, this is a quick and yummy on the go drink-meal that usually ties me over for hours. It doesn't hurt that it tastes like a strawberry milkshake either!
Oh boy. I'm in trouble. I've made the most sinfully delicious, dangerously addictive, mini banana bread loaves. Again, hats off to Chef Chloe for making the worlds most incredible banana bread recipe. I made it in mini loaves to share the love with everyone- who doesn't love a little mini loaf gift? Exactly. Also, I knew I didn't want an entire loaf of this in my house because I would eat the entire loaf of this in one sitting and then hate myself as I'm slipping away into a sugar induced coma. So make this, but then bring it to a dinner party where you can only cut yourself one single sliver, maybe two- but not more than two, otherwise you'll look like a total pig eating all the dessert you brought for everyone. Trust me, this will work. You can indulge this way but feel safe knowing there is a built in safety net assuring that you won't eat the entire thing, as you'll have to share.
