These pancakes are perfect. My favorite pancake recipe thus far, and for many reasons. The first reason being that these pancakes are made without flour, and instead steel cut oats. They're incredibly fluffy, far fluffier than any other pancakes I've ever had. And they're made so quickly!! With so little ingredients! Dare I say these bad boys aren't bad for you either? It's true, take a lot at the ingredients list!
Since I'm off of wheat for two weeks (I'm doing a two week self challenge of no wheat, no added/refined sugars) I feel like my breakfast options have become a little slimmer. Occasionally I would eat a bagel or toasted slice of sprouted bread. With that said, I did not miss the bagel or the bread after eating this delicious warm chia seed banana porridge. It's prepped at night and takes just a minute to prepare in the morning. Sounds great, doesn't it?
I'm such a sucker for jams, I absolutely adore them. Probably because my grandma spoon fed them to me since before I was eating solids. She makes all of her preserves by hand and always uses the fruit of each season. I have always wanted her to pass along the torch but when I found out how much sugar was in a traditional preserve I nearly dropped dead. I just couldn't justify that much sugar, ever. And traditional preserves are also very time consuming to make. So when I came up with this 8 minute preserve that required no added sugar and only 3 ingredients, I was beyond thrilled and just couldn't wait to share it with you!
I try and eat two tablespoons of chia seeds a day in order to reach optimal levels of Omega 3-fatty acids. Chia is truly natures little miracle if you think about it. In case you didn't know, the seeds have 8x the amount of Omega-3 than salmon does, 6x more calcium than milk, 3x more iron than spinach, 15x more magnesium than broccoli, 2x more fiber than bran flakes, 6x more protein than kidney beans, and 4x more phosphorus than whole milk.
Sometimes I throw the seeds into my protein shakes, other times I add chia to my water with a squeeze of lime. But this recipe has forevermore revolutionized the way I'll be consuming chia. HOLY COW. This pudding is sinful. And the best part about it? It's healthy! I was left feeling full, satisfied, and energized for the rest of the morning.
