I have a confession to make...
A friend of mine once told me she had the most amazing recipe for black bean brownies and I totally disregarded her! It wasn't personal... and it was probably a bit subconscious come to think of it. It's just that- well, black bean brownies have never impressed me. And I've had my fair share of them.
Fastforward to five months later when she made a batch for a holiday party.
These literally are THE BEST HEALTHY GRAIN FREE BROWNIES EVER.
So the moral of the story is: do not judge or dismiss said brownies simply because they contain black beans, and do not compare them to other black bean brownies because there truly is no comparison.
These brownies are so super fudgy that they really should be called "Super Fudge Brownies" but because it's not my recipe, we'll stick to the original title.
These brownies are delicious and easy to make. The best part is? They're healthy! You can whip up a batch even on the busiest of nights.
Granola is so delicious but it can be loaded with an insane amount of sugar when you purchase it from the store. This recipe is seriously easy and has just enough sugar to have a hint of sweetness, but not enough where it should come with a warning label! Plus, this recipe leaves room for creativity- you can really take the bare bones of this recipe and run with it! Add a little of this, a little of that, and you'll have your own favorite custom granola blend in no time!
Can we just talk about how easy this No-Churn ice cream is?! I never thought I'd be the type of gal who makes homemade ice cream- it seemed like a process. And the thought of another appliance was enough to forget the idea for good. But then I came across Unconventional Baker, who is a true foodie inspiration altogether and I realized ice cream doesn't have to be complicated, or loaded with a ton of ingredients. It doesn't even need an ice cream machine to make, or refined sugars for that matter. Soooo, her blog posts alone convinced me to give it a shot! This one is made with simple ingredients, without refined sugars, gluten or dairy, and is truly delightful. Just toss the ingredients in a high powered blender, freeze, and serve later on for a truly delicious treat.
This may be my new favorite go to snack. I had it for the first time yesterday when I got home from class and was rummaging through the fridge looking for something to eat. There was nothing. Well, almost nothing. There was a lone coconut milk plain yogurt and a box of organic blackberries. And so the coconut yogurt parfait was born.
These are my new favorite cookies. Truth: I'm a sucker for a cookie with oatmeal in it. It was the name that drew me in. Turtle. Impying caramel, of course. Something I haven't had in a long time. Not because vegans can't enjoy caramel, because we can totally make it out of coconut cream and sugar, I just haven't made any yet. Yet. Anyways, these cookies were incredible. Ok. I'm going to be honest, these don't actually have caramel in them... but it has a secret ingredient (date pieces) that sort of melt into that ooey-gooey caramel-like goodness. I made them for some friends that were housing me for the weekend (they all loved them, by the way) and the way they made the house smell while baking was so delightful.
These saffron raspberry yogurt cups left me speechless. They literally blew me away. My taste buds are wondering if I'm in heaven because they've never tasted anything so divine. They're magical. Purely magical. Each bite has a bit of crunch entwined with sweet vanilla bean and saffron goodness.
I'm not typically a dessert person but when I want to indulge I am certainly not the girl reaching for the nearest chocolate bar. Give me the lemons! Tart and tangy or something light and floral is what I crave most. When I saw this recipe I knew it would be perfect, I can't think of a better flavor profile than lemons and lavender.
