This is one of my favorite ways to enjoy quinoa- the only reason why I haven't posted this sooner is because I never manage to get a good picture before it gets scarfed down. Finally I decided to just post this without a great picture because frankly, you deserve this recipe!
Anyone love Thin Mints? I personally think chocolate and mint is a weird combo but I know I'm in the minority on this one. M loves them and I know many others who do too! Who wouldn't love a healthier, guilt free version of Thin Mints?
You may have noticed an influx of healthier dessert recipes on the blog lately. As many of you know I'm on a constant journey with trying to resolve my endometriosis and particular foods severely flare it up. So why all the dessert recipes lately? I make them for my other half. Having a support system with my diet is huge, and luckily my guy sticks to my diet without complaint so I'm not tempted by foods in the house that I can't eat. So I make him treats he loves that won't make me sick. Hence... all the dessert recipes!
So I have an embarrassing story about this fudge... This fudge had me the moment I checked out the recipe. It was in compliance with my many diet restrictions and seemed totally easy to make (check and check). So I whipped up a batch, added in some walnuts for good measures, and presented it to M at the end of our long day. We nestled in with our favorite series (The Office), in which we watch annually starting back a season one, and no we are not ashamed and no it never gets old. Anyone else obsessed with Michael Scott??
Ok so that's not even the embarrassing part...
I was so engrossed in The Office I didn't even realize how much fudge I was eating. Turns out I ate 4 huge hunks of it (which I know may not sound like a lot but I'm a little person and this was after I already ate dinner, plus fudge is super rich). So it hits me: like an immediate surge of pain in which I realize I've been mindlessly eating fudge for the past 20 minutes. And I'm in sheer agony. I'm in so much discomfort that I was actually up all night tossing and turning over my stomach pains in which I vowed 'I'm never eating that deathly fudge again!'. But now it's been a few weeks, and I can reflect upon this from a very rational frame of mind and realize- the fudge was not the problem- it was me, I was the problem! So yes, make this fudge because it's so delicious. But please, please- only have one hunk, or maybe two....
This sugar cookie recipe is a healthier version to a classic cookie. It's made with almond flour instead of all purpose flour and coconut sugar instead of refined cane sugar.
I have a confession to make...
A friend of mine once told me she had the most amazing recipe for black bean brownies and I totally disregarded her! It wasn't personal... and it was probably a bit subconscious come to think of it. It's just that- well, black bean brownies have never impressed me. And I've had my fair share of them.
Fastforward to five months later when she made a batch for a holiday party.
These literally are THE BEST HEALTHY GRAIN FREE BROWNIES EVER.
So the moral of the story is: do not judge or dismiss said brownies simply because they contain black beans, and do not compare them to other black bean brownies because there truly is no comparison.
These brownies are so super fudgy that they really should be called "Super Fudge Brownies" but because it's not my recipe, we'll stick to the original title.
It's really hard to try to stay in shape when dessert is always tempting me! I decided no matter what I'm going to make the best decisions I can when it comes to my food, which means tweaking recipes to fit my needs when I have people over for dinner. I made a no to low, depending on preference, added sugar apple pie like crumble and I was so impressed! Everyone loved it and I didn't have to feel guilty about betraying my health goals! Win-win if I do say so myself. I know, the picture does not do it justice.
I'm sitting here at the kitchen island looking out at the huge picture window in the kitchen watching a Cat 3 hurricane go by. It's stunning. Nature is absurd. Because I still have power, and nothing that needs to be done (except hurricane party of course- my Floridian readers, you know what I'm talking about), I decided to blog- while the power is still on. So with that I leave you with this delight- Tiramisu Swirl Banana Ice Cream Sheet Cake! I love Tiramisu. It's in my blood. I can't help it. This is a different take: healthier and lighter that mimics the flavors of Tiramisu so delicately.
Granola is so delicious but it can be loaded with an insane amount of sugar when you purchase it from the store. This recipe is seriously easy and has just enough sugar to have a hint of sweetness, but not enough where it should come with a warning label! Plus, this recipe leaves room for creativity- you can really take the bare bones of this recipe and run with it! Add a little of this, a little of that, and you'll have your own favorite custom granola blend in no time!
Aka, the easiest throw-together appetizer. This is my kinda dish. I love mushrooms, and I love them even more when they're stuffed with pesto. Give them a try! They're seriously easy to make.
