If you've never had a haystack then you're missing something very special in your life! There is this company down in South Florida called Glaser Farms and they make a a variety of delicious healthy snacks, dressings, pesto, etc. I used to get them at a market in Miami. Now that I no longer live down there I've learned to make my own version of the beloved haystacks. They're so sweet and delicious. The perfect healthier version to a dessert! Pair with a cuppa coffee and you're set!
1/2 cup unrefined virgin coconut oil
1/2 cup organic maple syrup
1/3 cup cocoa powder
1 teaspoon pure vanilla extract, preferably homemade
1/3 cup almond butter, tahini or any other preferred nut butter
3 cups unsweetened shredded coconut flakes*
Finishing salt, I used a smoked flake salt but any will do (it really enhances the sweetness!)
*If your coconut is firm/hard, boil a tiny bit of water (1/4 cup) and pour over coconut. Once cool, squeeze out the coconut. This will re-hydrate/perk it up a bit.
Mix together all ingredients (except coconut flakes) until smooth. Stir in coconut. Drop mounds onto parchment paper, finish with a pinch of salt per mount and freeze for a minimum of 25 minutes before devouring! Store in freezer or fridge, depending on preference.
