Coconut bacon is severely underrated. It's ridiculously simple to make and can be added to salads, baked potatoes and soups to make a great dish even better. I often find myself just eating it plain because yes, it's that good. Oh man, but can you imagine this as a coconut Bacon BLT? The possibilities are endless.
3 cups unsweetened flaked, not shredded, coconut
2 tablespoons liquid smoke
1 tablespoon Braggs liquid aminos or soy sauce
1 tablespoon pure maple syrup
1 tablespoon water
1/2 teaspoon smoked paprika
Preheat oven to 325°F. Prepare a baking sheet by lightly greasing it with refined coconut oil.
Toss ingredients in a bowl together until well incorporated.
Pour coconut onto the prepared baking sheet and evenly distributing it.
Bake for 20-25 minutes, using a spatula to flip the coconut bacon about every 5 minutes so it cooks evenly and doesn't burn.
Store in a container in a cool dry place for up to one month.
