This may be my new favorite go to snack. I had it for the first time yesterday when I got home from class and was rummaging through the fridge looking for something to eat. There was nothing. Well, almost nothing. There was a lone coconut milk plain yogurt and a box of organic blackberries. And so the coconut yogurt parfait was born.
1 single serving plain coconut milk yogurt, reserving half*
Handful of fresh blackberries, or preferred berries
2 heaping tablespoons of slivered almonds
2 heading tablespoons of raw rolled oats
1 pitted date, diced into small pieces
Pinch of saffron threads, optional
Drizzle of honey or maple syrup, optional
*I only used half of a single serving yogurt cup because once you add the almonds and oats it became the appropriate portion for my appetite. But if you're really hungry use the whole cup.
In a bowl add the yogurt. Top with remaining ingredients and serve.
