There's no sense in lying here, I'm a carb girl, through and through. Potatoes? Oh my God, yes! I could eat them for breakfast, lunch, and dinner and I still wouldn't be sick of them. Especially these, they are phenomenal. Colcannon is an Irish mashed potato dish with greens, usually kale or cabbage, mixed in. It's comfort food made in a crock-pot- which ultimately makes life 100x better.
2 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch chunks
1/2 cup vegetable broth
Salt, to taste
8 ounces kale, stemmed and finely chopped
2 tablespoons plant-based butter or olive oil
1/2 cup plain unsweetened nondairy milk, warmed
Fresh ground black pepper, to taste
You can swap the kale for cabbage, swiss chard, or any of you other of favorite greens
Spray the bottom and edges of your crock-pot with non stick coconut oil spray, or grease it with a little coconut oil. Add in the potatoes, broth, and salt to taste (this depends on how salty your broth is).
Cover and cook on until the potatoes are soft, about 4-4.5 hours on low, or 2-2.5 hours on high.
When your potatoes are almost done cooking, steam the kale until tender, about 5-7 minutes, set aside.
Using a potato masher, mash the potatoes in the crock pot until smooth, then mix in the vegan butter, warmed plant-based milk, pepper, and steamed kale- give it a good stir to incorporate everything.
Taste and adjust for seasoning. Serve along side with some Minute Stove-Top Gravy or Mushroom Gravy.
