Granola is so delicious but it can be loaded with an insane amount of sugar when you purchase it from the store. This recipe is seriously easy and has just enough sugar to have a hint of sweetness, but not enough where it should come with a warning label! Plus, this recipe leaves room for creativity- you can really take the bare bones of this recipe and run with it! Add a little of this, a little of that, and you'll have your own favorite custom granola blend in no time!
2 cups old fashioned oats
1/4 cup Grade B maple syrup or raw local honey
3 tablespoons coconut oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Here's where you can get creative:
1/4 cup flaked unsweetened coconut
2 tablespoons almond slivers
2 tablespoons hemp seed
3 dates, diced into small pieces
2 tablespoons golden raisins
Makes about 2 1/2 cups granola, this recipe doubles easily
Spray the bottom and sides of a crock-pot with non stick coconut oil spray. Add the oats, maple/honey, oil and extracts and give a good stir to incorporate. Next add the coconut, almonds, and hemp- or whatever else you're using.
Cook on high, uncovered for one hour. Then stir it up with a wooden spoon before cooking on low, this time covered, for 2 hours. At the last 30 minutes add the dates and raisins.
If your granola is crisp and crunchy before the 2 hour mark, that's fine. Your crock-pot may run a little warmer than mine.
Store in airtight container for up to two weeks.
