And yes, we have cheeze-like options like nutritional yeast, but if we're going to be honest here, nutritional yeast doesn't taste like Parmesan. So is this an Alfredo sauce? Kind of. It's like an Alfredo sauce. It's rich with subtle garlic flavors lurking under all that creamy-goodness. Is it yummy? Absolutely.
2/3 cup vegetable broth
1/2 cup + 2 tablespoons raw cashews
3/4 teaspoon white miso paste
2 tablespoons nutritional yeast
3 garlic cloves
Salt and Pepper to taste
Combine all ingredients into a vitamix and blend until smooth. If you don't have a vitamix you may need to soak the cashews in boiling water for 10 minutes to soften.
Heat over low on the stove top to warm up, then add in pasta or vegetable noodles, tossing to coat. Serve warm, with any desired garnishes. If the sauce thickens up with too much heat, add a dash of water to rectify the problem.
