Y'all. Oh My God. I am obsessing over Banana Nice (Ice) Cream! I want to make it every night for the rest of my life and just share it with everyone I meet from now until forever! La la la, call me dramatic- THIS IS THE BEST. And the possibilities are endless for flavor combos. Got some frozen bananas? What about 5 minutes to spare? Then you can have banana ice cream! AND YOU! And YOU over there!! And YOU too!! EVERYONE GETS BANANA NICE CREAM. Ok, I'm not Oprah, so I'll tone it down a bit. But for real, go make this.
2 frozen bananas cut into 1/2 inch rounds
1/2 tablespoon almond milk, as needed
Optional Add ins and toppings:
1 tablespoon all natural peanut butter, plus extra
Dare I say cookie dough?
Anything your little heart desires
Place banana chunks in food processor and process, occasionally scrapping down the sides. First the bananas will break down into soft crumbles, then it will start looking super gummy. Blend past that gummy stage until it's creamy and smooth like ice cream.
If the bananas are having a difficult time getting past the crumbles stage and into the gummy stage, add in the almond milk to assist the process, but no more than 1/2 tablespoon per two bananas.
Now you can blend in your desired toppings, or just top the ice cream with whatever you desire. I blended in 1 tablespoon of all natural peanut butter and a pinch of cinnamon, then I drizzled a little extra peanut butter on top along with a handful of pecans and a dash of sea salt.
I'm making this again tonight! But this time I'm adding in the above suggested cookie dough that is leftover from a batch of plant-based chocolate chip cookies... oh my god yessss.
