Sweet, chewy and the perfect bite to go with a nice cup of tea or coffee! I made these for a holiday party a few months back and they were a huge hit. Now I keep them on my "healthier sweets" rotation in the house.
Combine all ingredients in a bowl and mix until well incorporated. Place in fridge to allow batter to harden for 30 minutes.
Preheat the oven to 350°F.
Using a tablespoon, scoop out batter and place on a stainless steel cookie sheet, lightly flattening with your hand. Leave at least 1.5 inches of space between cookies.
Bake for 8-12 minutes, cool completely before serving.
