Every once in a while the world feels heavy and noisy and hectic all at once. In these moments I have to gather myself and regroup. I set out a blanket in the grass as the sun is setting, when all the busy bees are settling home from work. The world suddenly seems so still, so quiet. It feels like mine alone. In these moments I sit in silence, legs crossed, eyes closed, and I find my center again. Sometimes, like in the picture below, I make a mug of hot cocoa, and really rejoice in the fact that I'm alive. And life is beautiful. The universe is on our side, it is bubbling over with love and life and grand opportunities. Everything you need is right here, within you. You just need to take a step back and breathe, center yourself, find your roots again and trust.
1 BPA-free can coconut milk
Unsweetened almond milk
1/4 - 1/3 cup high quality unsweetened cocoa powder*
1/4 cup sugar
1 vanilla bean
Rice or Soy whipped cream, available at whole foods
*I love the cocoa powders from King Aurthur Flour and have used both their Bensdorp Dutch Process cocoa and Triple Cocoa Blend with this recipe. Any high quality cocoa will work. Something like Hershey's will not as the processing of cheap cocoa tends to make for a very bitter end product.
In a pot over medium heat add the coconut milk. Fill the empty coconut milk can up with almond milk, add to the pot.
Whisk in the cocoa powder and sugar.
Using a knife, cut the vanilla bean lengthwise and scrape out the vanilla seeds, add the seeds and bean to the pot and simmer for a five minutes.
Pour into two mugs, adding whipped cream if desired, enjoy.
