These pancakes are perfect. My favorite pancake recipe thus far, and for many reasons. The first reason being that these pancakes are made without flour, and instead steel cut oats. They're incredibly fluffy, far fluffier than any other pancakes I've ever had. And they're made so quickly!! With so little ingredients! Dare I say these bad boys aren't bad for you either? It's true, take a lot at the ingredients list!
2 chia eggs
1 cup steel cut oats
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 ripe bananas
2 tablespoons organic unrefined coconut oil
2 teaspoons maple syrup (pure, organic, & preferably grade B) or raw local honey
2 tablespoons juice from an orange or lemon
2 teaspoons vanilla extract
First, make your chia eggs, click here for instructions.
While the eggs are setting: In a high power blender add the steel cut oats and blend until it turns into a powder. It doesn't have to be perfect, a little texture is okay.
Pour the oat powder into a small bowl and mix in the baking soda, cinnamon and nutmeg.
In the blender you used previously, add the bananas, chia eggs, coconut oil, maple syrup, juice from the orange or lemon, and vanilla extract- blend until smooth.
Mix the wet and dry ingredients- add a dash of water if it needs to be thinned slightly.
In a pan over medium heat, spray some non stick cooking spray (I used a non stick coconut oil spray), and pour a little batter down, cook for a couple minutes per side.
Serve with fresh fruit and some warm pure organic maple syrup.
