Alright folks, it's that time again. Fall is approaching and we can celebrate with all things pumpkin. Pumpkin lattes, pumpkin carving and yes- pumpkin streusel coffee cake! These minis are the perfect treat for any occasion. Can we be real for a moment? Sometimes just getting through Monday is something to celebrate, so go on now... pumpkin up!
1/2 cup brown sugar
3/4 cup all purpose flour
5 tablespoons plant-based butter, at room temperature
1 teaspoon ground cinnamon
1/2 cup pecans, roughly chopped
Coffee Cake Ingredients:
1 cup non-dairy milk (I used unsweetened almond milk)
1 teaspoon apple cider vinegar
2 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 cup pumpkin puree
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup coconut oil
*If you're looking to make this into a cake rather than mini muffins use a 9-inch springform pan and bake for 50 minutes, or until a toothpick comes out clean from the center.
Preheat oven to 350°F. Grease a mini muffin tin and set aside.
In a bowl mix together the all the streusel ingredients, set aside.
In a large bowl mix the milk and apple cider vinegar, let sit at room temperature for five minutes.
Meanwhile, in a separate bowl sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves.
In the bowl with the milk and vinegar add the pumpkin puree, brown sugar, white sugar and oil, whisk until smooth. Slowly add in the flour mixture, mixing together with a fork until just incorporated. Do not over mix as it will turn out gummy.
Using 1/2 a tablespoon measurement add batter into each hole and top with a pinch of streusel. Add another scoop of batter over top and finish with another pinch of streusel. Careful not to overfill each hole.
Bake for 17-22 minutes or until a toothpick comes out clean when poked through the center. Allow to cool to room temperature before eating.
