Sometimes you just want pizza. Like really, really want pizza. It's seriously one of my all time favorite things ever. I love it all ways: the cheap $1 slices at 2am in the lower east side of Manhattan right off the subway station, the fancy burnt crust of the fire roasted pizzas with kalamata olives, artichoke hearts and sun-dried tomatoes. I love it with thin crust piled high with pineapple chunks and red pepper flakes, with no cheese and extra toppings, with homemade cashew cheese from the hip neighborhoods in Jacksonville, and with Daiya cheese when instead of going out to grab pizza we decide to stay home and make it ourselves. Is it evident now exactly how much I love pizza? The down side is, I'm also very cautious of what I eat on a day to day basis. So pizza is a treat to me and I only eat it when I'm absolutely dying for a slice. I was absolutely dying for a slice.
Ready made pizza dough, thawed if frozen*
Pizza Sauce in a jar
Daiya Mozzarella style shreds
Garlic and Onion powder, to taste
Salt, to taste
You can use anything you desire here! We used sliced onions and chives from the garden. Next time it's pineapple all the way for this girl.
*You can find pizza dough in the bakery of most grocery stores, just ask them for it and it's usually in the back. We purchased ours from Publix but Whole Foods also has it freshly made sectioned out in little balls behind the counter.
Take the dough out of the fridge and allow it to rest on the counter for an hour.
Preheat the oven to 450°F.
I used a cast iron pizza pan (which I'm obsessed with), but any pizza pan will do. Lightly grease the pan with nonstick spray.
Work the dough out to a size that will fit the pan. We tried our best to work it into the perfect circle and I think we did a pretty decent job. (I actually did none of the physical work on this one!)
Transfer the dough to the pizza pan and prebake for 10 minutes.
Pull from the oven and spoon sauce onto the middle, evenly spreading it over the dough. Sprinkle with a little garlic and onion powder to taste, along with a dash of salt.
Sprinkle the cheese over top along with your desired toppings.
Bake in the oven for 30 minutes.
Remove and allow to cool slightly before slicing and serving.
