Thanksgiving is right around the corner and for those of you who don't know me- this is my absolute favorite holiday! Having all my loved ones together is incredibly precious to me. It's rare that we can all take an entire (mutual) day out of our busy lives and come together, Thanksgiving, however, grants us the opportunity to do so. It is a day where we can truly recognize and be grateful for all the blessings we've been gifted... It's humbling.
With that said, it just wouldn't be Thanksgiving without sweet potato casserole. The only thing is some sweet potato casserole recipes out there are cloyingly sweet. Maybe some people like that, but not us. Sweet potatoes are already sweet! This recipe just adds a touch of maple and the perfect combination of spices, topped with a nutty (and not too sweet) brown sugar crumble.
4 large sweet potatoes
2 tablespoons plant-based butter or coconut oil
1/4 cup plant-based milk*
1/4 cup orange juice
1 teaspoon vanilla extract
1/4 cup pure maple syrup
1/2 teaspoon salt
3/4 teaspoon freshly grated nutmeg
3/4 teaspoon cinnamon
1/4 cup plant-based butter
1/2 cup brown sugar
1/3 cup all purpose or chickpea flour
3/4 cups raw pecans, chopped
2 tablespoons pure maple syrup
*I prefer unsweetened plain almond or coconut milk but if you prefer soy or hemp milk that would work as well.
Preheat the oven to 400° F.
Scrub the potatoes and pierce several times with a fork. place them on a baking sheet that has been sprayed with non-stick cooking spray.
Bake until tender, about 45 minutes. Remove from oven and allow to cook before handling.
Preheat the oven to 350°F. Prepare a medium sized casserole dish by spraying with non-stick cooking spray, set aside.
Cut your sweet potatoes in half and scoop out the flesh, discarding the skins. Place the flesh into the base of a stand mixer or a large glass bowl. Add the plant-based butter or coconut oil, orange juice, vanilla extract, maple, salt, nutmeg and cinnamon. Using the stand mixer or a handheld mixer, whip until smooth.
Pour into the prepared casserole dish and level with a spatula.
In a small bowl mix together the topping ingredients. Spoon the topping over the casserole.
Bake for 35 minutes, serve warm.
