Since I'm off of wheat for two weeks (I'm doing a two week self challenge of no wheat, no added/refined sugars) I feel like my breakfast options have become a little slimmer. Occasionally I would eat a bagel or toasted slice of sprouted bread. With that said, I did not miss the bagel or the bread after eating this delicious warm chia seed banana porridge. It's prepped at night and takes just a minute to prepare in the morning. Sounds great, doesn't it?
1 ripe banana
1/2 teaspoon vanilla extract
Dash of cinnamon
1 cup full fat coconut milk
3 tablespoons chia seeds
Desired toppings of your choice: hemp seeds, nuts, berries, etc.
In a bowl, mash the banana with a fork until all the clumps are gone. Add in the vanilla extract, cinnamon, and milk- whisk with the fork to combine. Add the chia seeds, and mix until incorporated.
Refrigerate for a minimum of 4 hours or overnight.
In the morning, heat a pan with a little refined coconut oil, once hot add the porridge and saute for a minute, until warmed through. Pour into a dish and top with desired toppings, such as hemp seeds, nuts, fruit. Enjoy!
