I loved these the first time I made them, and the second, and the third. A girlfriend of mine sent me this recipe and I loved it from the moment they were pulled from the oven. They're ridiculously easy and a little zestier than just roasting the asparagus plain, which by the way is still amazing. Some veggies are so delicious they really don't need much help.
1 bundle asparagus, trimmed and washed
Coconut oil, melted to a liquid state
1 teaspoon garlic powder, plus extra to taste
2-3 tablespoons nutritional yeast
Preheat your oven to 425°F.
Grease a baking sheet with some coconut oil.
In a bowl drizzle some coconut oil (a few teaspoons) over the asparagus, sprinkle the garlic powder and salt to taste, and the juice from half a lemon- toss to incorporate.
Lay your seasoned asparagus out on the prepared baking dish and roast in the oven for 15 minutes. (If you're using pencil-thin asparagus adjust your cooking time to 8-10 minutes).
Sprinkling the nutritional yeast over top and gently toss. Taste and adjust for more garlic powder and salt to your liking.
Arrange on a dish and serve.
