I know, I know. I missed the mark on this one. I'm posting a pumpkin pie recipe after thanksgiving. What good am I? But really, pumpkin pie shouldn't be reserved strictly for thanksgiving, who comes up with this stuff? I mean, good pie is good pie and dates shouldn't really factor into it. Toss out that pumpkin pie misconception that says it's to only be eaten for Thanksgiving and get ready to sink your fork into this glorious pumpkin delight.
Convincing am I?
The truth is, I've never made this pie before and it wasn't until Thanksgiving day that I finally got around to whipping it up. I didn't want to steer anyone in the wrong direction by prematurely posting a recipe that could possibly turn out to be merely mediocre, so I took the risk and waited. Well, turns out this pie is pumpkin perfection. It was featured on the Post Punk Kitchen and is also featured in the cookbook Vegan Pie in the Sky. This recipe is a Myra Kornfeld original, author of Voluptuous Vegan.
But honestly it really is okay to eat pumpkin pie in December- I did so yesterday and it was glorious.
Oh, we had a cold front this past week! Yes, a cold front! It was so glorious. No, it wasn't sweater weather by any means but I wasn't sweating in leggings and flats- it's the little victories, really. I think it dipped to 74°F and so of course I made chili. And to-die-for corn bread but we'll get to that later. This chili, as you may have guessed, is Autumn themed- basically it has pumpkin and cinnamon in it. Yes, I know, I don't really like pumpkin, but I swear to you it doesn't make it pumpkiny at all. It just makes it thick and creamy and magical. Plus pumpkin is rich in vitamin A (a precursor for rhodopsin, the pigment needed for us to see at night)...gotta protect those eyes, yuh know what I mean? Anyways, I made a huge pot of this and then proceeded to eat it for breakfast, lunch and dinner for several days in a row until it ran out, and truthfully each bowl was equally as delicious as the first.
Alright folks, it's that time again. Fall is approaching and we can celebrate with all things pumpkin. Pumpkin lattes, pumpkin carving and yes- pumpkin streusel coffee cake! These minis are the perfect treat for any occasion. Can we be real for a moment? Sometimes just getting through Monday is something to celebrate, so go on now... pumpkin up!
