I have a confession to make...
A friend of mine once told me she had the most amazing recipe for black bean brownies and I totally disregarded her! It wasn't personal... and it was probably a bit subconscious come to think of it. It's just that- well, black bean brownies have never impressed me. And I've had my fair share of them.
Fastforward to five months later when she made a batch for a holiday party.
These literally are THE BEST HEALTHY GRAIN FREE BROWNIES EVER.
So the moral of the story is: do not judge or dismiss said brownies simply because they contain black beans, and do not compare them to other black bean brownies because there truly is no comparison.
These brownies are so super fudgy that they really should be called "Super Fudge Brownies" but because it's not my recipe, we'll stick to the original title.
These brownies are delicious and easy to make. The best part is? They're healthy! You can whip up a batch even on the busiest of nights.
If you've never had a haystack then you're missing something very special in your life! There is this company down in South Florida called Glaser Farms and they make a a variety of delicious healthy snacks, dressings, pesto, etc. I used to get them at a market in Miami. Now that I no longer live down there I've learned to make my own version of the beloved haystacks. They're so sweet and delicious. The perfect healthier version to a dessert! Pair with a cuppa coffee and you're set!
I try and eat two tablespoons of chia seeds a day in order to reach optimal levels of Omega 3-fatty acids. Chia is truly natures little miracle if you think about it. In case you didn't know, the seeds have 8x the amount of Omega-3 than salmon does, 6x more calcium than milk, 3x more iron than spinach, 15x more magnesium than broccoli, 2x more fiber than bran flakes, 6x more protein than kidney beans, and 4x more phosphorus than whole milk.
Sometimes I throw the seeds into my protein shakes, other times I add chia to my water with a squeeze of lime. But this recipe has forevermore revolutionized the way I'll be consuming chia. HOLY COW. This pudding is sinful. And the best part about it? It's healthy! I was left feeling full, satisfied, and energized for the rest of the morning.
Every once in a while the world feels heavy and noisy and hectic all at once. In these moments I have to gather myself and regroup. I set out a blanket in the grass as the sun is setting, when all the busy bees are settling home from work. The world suddenly seems so still, so quiet. It feels like mine alone. In these moments I sit in silence, legs crossed, eyes closed, and I find my center again. Sometimes, like in the picture below, I make a mug of hot cocoa, and really rejoice in the fact that I'm alive. And life is beautiful. The universe is on our side, it is bubbling over with love and life and grand opportunities. Everything you need is right here, within you. You just need to take a step back and breathe, center yourself, find your roots again and trust.
It was a sunny afternoon over a year ago when I first tried this dish at the Lyon family home. We were gathered around in the living room balancing plates of delectable vegetable dishes on our laps, this being one of them. I remember trying to guess the ingredients in the sauce, there was something so delicious that I couldn't put my finger on. Turns out it was cocoa powder! You're going to have to taste this for yourself to appreciate the magical powers of the cocoa in this dish- then we can sing it's praises together!
