Granola is so delicious but it can be loaded with an insane amount of sugar when you purchase it from the store. This recipe is seriously easy and has just enough sugar to have a hint of sweetness, but not enough where it should come with a warning label! Plus, this recipe leaves room for creativity- you can really take the bare bones of this recipe and run with it! Add a little of this, a little of that, and you'll have your own favorite custom granola blend in no time!
Literally all you have to do is throw this stuff into a crock-pot and wait, how amazing is that? And at the end of it you'll have a rich, creamy black bean soup worth writing home about. You can really elevate this dish with the garnishes as well- a little avocado and a squeeze of lime (which I did), but you could also add a sprig of cilantro, a diced tomato, or anything else your heart desires. Regardless of the garnishes, this soup is insanely easy to make and delicious.
There's no sense in lying here, I'm a carb girl, through and through. Potatoes? Oh my God, yes! I could eat them for breakfast, lunch, and dinner and I still wouldn't be sick of them. Especially these, they are phenomenal. Colcannon is an Irish mashed potato dish with greens, usually kale or cabbage, mixed in. It's comfort food made in a crock-pot- which ultimately makes life 100x better.
I enjoy developing new recipes and being able to tastes things I've never tried before, but I also love having a few "pocket" recipes that I can always count on. This is one of those pocket recipes. I came home from class and I could see in the sky that another Florida summer thunderstorm was about to roll through and I just thought nothing goes better with dreary weather than delicious soup. This soup is smoky with an underlining heartiness to it that will make you question it's plant-based ingredients. Are you sure there is no bacon in this? Yes, I'm sure.
This is pretty much a non-recipe, which is basically the best type of recipe there is! Got apples? A crock-pot? Then you can make homemade, delicious and preservative free apple sauce! (I'm sure if you don't have a crock-pot you can just use the stove top, but then you have to linger around the kitchen to assure you don't burn the place down..)
For those of you who have never tried boiled peanuts, try these. For those of you who claim to hate boiled peanuts, make these. These boiled peanuts are extraordinary, quote unquote. I made a large batch while on vacation in Jacksonville and everyone thought they were outstanding. I know it's sort of a southern thing but trust me on this one, will yuh?
Many people know autumn has officially arrived because Starbucks has rolled out it's signature Pumpkin Spice Latte (which are not dairy-free by the way- don't get too excited).
Others know it's officially autumn because the calender has said so.
Autumn means my social media sites become inundated with pictures of my best girlfriends gallivanting through pear and apple groves, snapping the most adorable pictures with their boyfriends, husbands and loved ones standing next to trees with pounds of fruit hanging off them. They're posting pictures of overfilled baskets of hand picked apples and pears with captions that make my heart ache with envy. I want to go gallivanting through apple and pear orchards, pick my own fruit, and post adorable pictures too! Oh, life can be so cruel.
Instead I got a box of pears (picked by someone else, mind you) delivered to my front door by my lovely CSA. This is how I knew it was officially autumn, le sigh.
