So I have an embarrassing story about this fudge... This fudge had me the moment I checked out the recipe. It was in compliance with my many diet restrictions and seemed totally easy to make (check and check). So I whipped up a batch, added in some walnuts for good measures, and presented it to M at the end of our long day. We nestled in with our favorite series (The Office), in which we watch annually starting back a season one, and no we are not ashamed and no it never gets old. Anyone else obsessed with Michael Scott??
Ok so that's not even the embarrassing part...
I was so engrossed in The Office I didn't even realize how much fudge I was eating. Turns out I ate 4 huge hunks of it (which I know may not sound like a lot but I'm a little person and this was after I already ate dinner, plus fudge is super rich). So it hits me: like an immediate surge of pain in which I realize I've been mindlessly eating fudge for the past 20 minutes. And I'm in sheer agony. I'm in so much discomfort that I was actually up all night tossing and turning over my stomach pains in which I vowed 'I'm never eating that deathly fudge again!'. But now it's been a few weeks, and I can reflect upon this from a very rational frame of mind and realize- the fudge was not the problem- it was me, I was the problem! So yes, make this fudge because it's so delicious. But please, please- only have one hunk, or maybe two....
If you've never had a haystack then you're missing something very special in your life! There is this company down in South Florida called Glaser Farms and they make a a variety of delicious healthy snacks, dressings, pesto, etc. I used to get them at a market in Miami. Now that I no longer live down there I've learned to make my own version of the beloved haystacks. They're so sweet and delicious. The perfect healthier version to a dessert! Pair with a cuppa coffee and you're set!
Can we just talk about how easy this No-Churn ice cream is?! I never thought I'd be the type of gal who makes homemade ice cream- it seemed like a process. And the thought of another appliance was enough to forget the idea for good. But then I came across Unconventional Baker, who is a true foodie inspiration altogether and I realized ice cream doesn't have to be complicated, or loaded with a ton of ingredients. It doesn't even need an ice cream machine to make, or refined sugars for that matter. Soooo, her blog posts alone convinced me to give it a shot! This one is made with simple ingredients, without refined sugars, gluten or dairy, and is truly delightful. Just toss the ingredients in a high powered blender, freeze, and serve later on for a truly delicious treat.
The best carrots are roasted carrots! Whether roasted with pesto, orange-ginger roasted, cinnamon roasted or these beauties- curry roasted with a delicious peanut sauce drizzle! These would be great served over some warm couscous with golden raisins! Give it a try.
Y'all. Oh My God. I am obsessing over Banana Nice (Ice) Cream! I want to make it every night for the rest of my life and just share it with everyone I meet from now until forever! La la la, call me dramatic- THIS IS THE BEST. And the possibilities are endless for flavor combos. Got some frozen bananas? What about 5 minutes to spare? Then you can have banana ice cream! AND YOU! And YOU over there!! And YOU too!! EVERYONE GETS BANANA NICE CREAM. Ok, I'm not Oprah, so I'll tone it down a bit. But for real, go make this.
A tribute post to our college peanut butter banana smoothie addition: My best friend/former Tallahassee roommate, Indigo, and I used to drink these on the regular. Seriously, probably about three times a week. Except I've jazzed it up a bit with some cacao nibs this time around. Oh, nostalgia is hitting me like a wave... Nothing quite like those college days, huh Indie? Le sigh.
