Ah! I can't believe how long it's been since I posted a recipe. There's a whole bunch of reasons why, ultimately life. My energy goes mostly to my job, then balancing that with trying to keep myself healthy and sane. Finding time for myself, my friends, my passions, my family. I've been writing a cookbook, a baby's first foods cookbook with an emphasis on health awareness. I can't wait to share that with you! But in the meantime I'm going to share this- the most delicious summery drink that makes my heart sing! Strawberry Lemonade!
1 container strawberries, stems removed
1 large pitcher filled 3/4 of the way with water (If I had to guess I'd say roughly 8 cups)
Sweetener of your choice (I used 1/4 cup xylitol and 2 tablespoons raw honey)
Take some of the water from the pitcher and place it in a sauce pan, add the xylitol and honey, and simmer until completely dissolved. Return the sweetened water to the pitcher.
Blend the strawberries in a blender with a dash of water until smooth. Run the blended strawberries through a fine strainer, throwing away the pulp. Place the strained strawberry juice into the pitcher.
Juice the lemons, strain juice and add to pitcher.
Stir the contents in the pitcher with a larger wooden spoon to incorporate. Taste and adjust for sweetness. Place in fridge to chill or serve over a ice.
