I'm not sure about the rest of the country but it is hotttt here in Jacksonville, FL. Spring, thank you for showing face for about 2 weeks... next time feel free to stick around longer.
When I lived in South Florida we really only had 2 seasons, Deathly Hot and Warm, at least in Jacksonville we have Cool, Chilly, Warm, and Deathly Hot (can't avoid that one sadly). Hey, I'll take what I can get. This watermelon salad will cool you right off. It's perfect for BBQ weather (or basically the majority of the year weather if you're in Florida)
Diced mint and Basil
Thinly shaved red onions (I used pickled red onions but raw works too)
Crumbled feta or Kite Hill Dairy Free Ricotta
Drizzle of unfiltered extra virgin olive oil
Drizzle of reduced balsamic vinegar, I used a fig balsamic because it's what I had on hand.
Layer watermelon on a plate and top with remaining ingredients (portions of each ingredients depend completely on taste and preference!). Serve chilled.
