With the arrival and Spring and warmer weather I find myself gravitating more towards salads, and no salad is complete without my go-to salad dressing! Slightly sweet with maple but tart with balsamic, you'll love how this dresses up any salad you make!
These deviled eggs are mildly pickled which gives them a little something extra in flavor but what really wows is that gorgeous pink color from the beets! Filled with a creamy center spiced with curry powder, these are an absolutely show stopper in both looks and flavor. I did a thing. I ordered an enormous amount of bagels from NYC and let 1/2 of them go stale. Don't ask how this happened. Time flies, you know? I should've froze them upon arrival, but I didn't. And before I knew it I was left with two dozen stale bagels. Luckily, bagel chips are best made with stale bagels...and who doesn't love a crispy, salty bagel chip? They can be made in under 15 minutes from start to finish and store for up to 2 weeks in an airtight container or ziplock bag.
This dish has three of my favorite things: pasta, avocados and pesto. Can you ask for more? It's easy to make and absolutely delicious. You can easily swap out regular pasta for a protein dense alternative like lentil pasta to make this a complete meal.
